Asparagus & Potatoes


This is so easy and delicious! It passes the kid test here, too, as it is colorful, flavorful, and potato-ful (usually helps most anything pass the test)!

4 medium potatoes, sliced
1 pound asparagus, cut into 2" pieces
½ cup Italian Dressing

Try low-fat or homemade dressing, too!

1. Remove tough ends from asparagus and discard.
2.Wash and chop vegetables and stir in the Italian Dressing.:
3.Bake mixture in a covered dish at 350 until potatoes soften, about 30 minutes.:
